Tzatziki

Peel the cucumber, remove the seeds and grate.

Place the grated cucumber on a clean tea towel and remove the excess water.

Crush the garlic in a mortar and chop the dill and mint.
In a bowl, mix the yogurt, drained cucumber, crushed garlic, dill, mint and lemon zest.

Once well mixed, season with salt, pepper and a dash of olive oil.
