WITH HERB PESTO AND ROASTED CASHEW NUTS

Ingredients

  • 100 g spaghetti
  • 1 sprig of basil
  • 1 sprig of fresh thyme
  • 1 sprig of mint
  • 1 sprig of coriander
  • 2 tbsp olive oil
  • 1 tbsp of almonds
  • 1 tbsp of peanuts
  • 1 tbsp of grated Parmesan
  • 1 clove of garlic

Preparation

  • Add the herbs, garlic, Parmesan, cashews and olive oil in a blender or in a pestle and mortar. Beat everything until you get a uniform and very green paste.

  • Cook the spaghetti, drain the water and add the pesto. Mix well and add some of the cooking water.
  • Serve immediately with a drizzle of olive oil.
