Spaghetti
WITH HERB PESTO AND ROASTED CASHEW NUTS

Ingredients
- 100 g spaghetti
- 1 sprig of basil
- 1 sprig of fresh thyme
- 1 sprig of mint
- 1 sprig of coriander
- 2 tbsp olive oil
- 1 tbsp of almonds
- 1 tbsp of peanuts
- 1 tbsp of grated Parmesan
- 1 clove of garlic
Preparation
- Add the herbs, garlic, Parmesan, cashews and olive oil in a blender or in a pestle and mortar. Beat everything until you get a uniform and very green paste.
- Cook the spaghetti, drain the water and add the pesto. Mix well and add some of the cooking water.
- Serve immediately with a drizzle of olive oil.
