Soak the almonds overnight.

Soak the bread in cold water.

Put the almonds with their water, the well-drained bread, the vinegar, the garlic, and the salt in a blender. Add 150 ml of cold water.

Blend until the mixture is very smooth. Slowly incorporate the oil with the blender running. Gradually add cold water until you reach the desired thickness. Finally, let it cool in the fridge.

Serve the white garlic soup in bowls. For the topping, chop the almonds in a mortar and sprinkle them on top of the white garlic soup. Serve with some grapes.
